Lobia Vada Recipe | Black Eyed Beans Fritters Recipe

Black eyed peas (lobia) – 1 cup (soaked for 8-10 hours) Spinach – 1 cup (finely chopped) Green coriander – 12-3 tbsp (finely chopped) Salt – 1 tsp Red chilly powder- ¼ tsp Coriander powder- ½ tsp Green chilies – 2 (finely chopped) Ginger – 1 inch piece (grated) Asafoetida – 1-2 pinch Oil – to fry vade Firstly grind the lobia seeds. Add lobia seeds and little water in a mixture grinder jar and grind them coarsely. Now add all spices in the paste. Add coriander powder, salt, red chilly powder, ginger, green chilies,
coriander leaves and spinach. Mix all ingredients well. Also add asafoetida. Mixture for making vada is ready. Heat the oil for frying the vada’s. Take 2 tsp mixture in your hands, make it round and give it a shape of vada. Place it gently in the pan. Fry as much vada as possible at one time. Cook till they get golden brown color. Fry all vada’s like wise. Lobia vada’s are ready. Very crispy and tasty vada are made. Serve with tomato sauce or green coriander chutney.
