Idli Dosai Batter Using Blender (In English) | Soft Idli and Crispy Dosa Batter Recipe


Wash and soak idli rice for 8 hours(May be overnight) Wash and soak urud dhal and fenugreek seeds together just for 30 minutes before grinding the batter After 30 mins, drain the urud dhal but collect the drained water in a separate bowl to use it for grinding Add the urud dhal and fenugreek seed in the blender, add 1 tsp of salt Add a cup of drained water . Now let us grind it into a smooth paste It will hardly take 2 to 3 minutes You can add 1/4 cup more water if you find the batter is too thick and not grinding well Now let us check the consistency of the batter Its very smooth So urud dhal is done Transfer it into a large bowl Now let us grind the soaked rice in the blender Add the rice in the blender and add 1 tsp of salt Make sure you add water upto 2 inches above the rice Also make sure you don’t overfill the blender above the maximum level mentioned Give a pause for few seconds in between while grinding rice batter to avoid over heating of the blender Unlike the urud dhal batter which should be very smooth, this rice batter can be made little coarser You can see the consistency of the batter I left 3 pauses in between and grinded for 5 minutes now The batter is ready Combine the urud dhal and rice batter in a
large bowl Use your hand to mix the batter Mix well scraping the bottom and sides and beat the batter in a circular motion for 2 mins When done, clean the sides and cover the bowl with a loose fitting lid and set it undisturbed For fermenting batter in cold countries, place in your conventional oven or microwave oven undisturbed for 6 to 8 hours After 8 hours, you can see the batter has
risen well Now we can try making idli and dosas using this batter Take little portion of the fermented batter,
add little water and mix well and make idlis in the idli cooker and cook for 10 minutes After taking it out, allow to cool for 2 or
3 mins else idli will get stuck while removing Let us prepare dosas with the same batter.When tawa is hot, sprinkle little water and spread it across to reduce its temperature and then pour dosa batter Unlike idli batter, dosa batter should have
running consistency So add more water while preparing dosas I don’t use cooking soda
