Are we supposed to give up like that? or maybe we’re supposed to go out and buy a stand mixer But just make buttercream?   • What speed would you recommend for the hand mixer? Is it a medium speed setting? Is it the same speed for the initial mix and the butter step?

  • I'd really love to try this. But all in all how long did you mixed it? It seems like it took so long. I've been trying a lot of swiss buttercream procedure using a hand mixer but never succeeded. It always turned out watery 😢😢😢

  • I tried making swiss meringue buttercream with my hand mixer, however I think the motor of my mixer kept melting the butter and egg whites. I was never able to get my buttercream as fluffy as yours is in the video. I'm going to try again, this time maybe I'll transfer the bowl to an ice bath after it comes back down to room temperature, and see if that works. I'm at a loss on what to do. :/
